I do not stress this anymore. I simply work with Panera Bread. It is what my doctors' offices prefer, and it comes in CLOSED boxes. A Via Panera gal sets it up, I simply open the boxes when I am ready. It's gorgeous, it's delicious, and it fits in my budget. No more hastles. They even have a rewards program for repeat catering customers. I have a contact I use in my territory (the metro NY area / bronx / rockland county / orange county).
