Leo's Gardening, Cooking and Travel Tips

Well fuck da botha yas.
I'm a yankee and I challenge any fucking redneck to a grit cook-off.
I'll take on that little wench DD with her fucking pfft. Ow about it baby?
We can do it on my boat when I sail down to HH. If I win I have my way with you for one night. If you win I find you a job.
My grits kick ass and are known through out the north east.
Put your money where your mouth is: post the recipe, we'll let Paleface's wife cook both, and HE can be the judge. Sound fair?
You should help me find a job anyway - just because you are a nice guy.

I am fucking impressed with your culinary skills DD.
You are giving me a woodie just thinking about you running around the kitchen
with nothing on but a little apron and a wooden spoon.
Are you a trained chef?
Trained by my dear Mother on midwest farming recipes and 1st momma-in-law on southern foods.

I'm sure she doesn't want to sail the Hershey waterway so you can kill that idea. You can't cook grits boy so just let this one go. Feel free to post quiche recipes though.
I would LOVE to have some quiche recipes. I usually buy the frozen one in the carton and pour in into a piecrust. Those are pretty good, too. I'm all about EASY. And using wooden spoons.

Here's a good venison recipe.

Take a V-roast and cut it up into chunks. Fry it up just a little in the pan w/ lard, a lot of salt and a lot of pepper.

Throw it in the crockpot w/ 2 cans of beef broth and a couple of cut up potatos and 2 onions cut into quarters.

Throw in some garlic salt and a couple splashes of Dale sauce.

Cook on low while you are at work.

Simple but delicious.

With venison...also marinade the meat in wine first:)
Haven't had it in years though.

With regards to Leo's 'grits', TRUST ME...in the northeast/tri-state area, it is not on any menu...few and far between. Leo may know to cook it, but people here squirm away from it. It's a good southern dish.

Known throughout the northeast? Where Mr.Leo? In the boondocks of Jowsey?:p

Quite frankly Scarlett, I would like to put you over my knee, pull down your panties and give you a very thorough spanking!
EVERY diner from Cape May, to Montauk Point to Provincetown has grits.
They are not as good as mine but they are edible for Yankee fare.
DD you are on with the contest. I trust pale horse and Mrs Pale to be good judges in this....how about our bet? Are you and Scarlett up for a menage trois if you loose?

umm, Scarlett isn't part of our deal. So, NO.
Post your best recipe for grits - and not Shrimp and Grits (that's a meal) - a grits recipe that can be used for breakfast, like mine.
Paleface is going to like mine better, I guarantee it.

I'm with you DD. I don't do threesomes, and no, Leo I don't like it over the knee.

You just explained it all. EVERY DINER? The majority of diners are owned by Greeks. What the heck do they know? lol

Also, I've been to Cape May, been to Provincetown and even to the tip of Long Island...no grits on my menu radar. Sorry dude.

pffft!

Cheese Grits w/Bacon

4 cups chicken stock
3 tablespoons unsalted butter
1 1/2 cups regular grits
3/4 cups shredded Monterey Jack
1 cup shredded extra sharp cheddar cheese
2 green onions, thinly sliced
1 tablespoon Tabasco sauce
salt to taste
Freshly ground pepper to taste
1/2 cooked bacon crumbled

In a large, heavy saucepan, bring the chicken stock to a boil. Adjust the heat to a simmer. Add 1 tablespoon of the butter. When it has melted, begin to pour in the grits with one hand while constantly whisking long-handled wooden spoon and stir until the grits become thick and absorb the liquid. This should take from 7 to 10 minutes.

Remove from heat and stir in the remaining 2 tablespoons butter, cheese, green onions and Tabasco. Combine everything thoroughly and season with salt and pepper.

Preheat the oven to 350°F (175°C). Butter an 8-inch square pan, or other similar-sized baking pan, and spread the grits into the pan. Bake for 20 minutes or until they are heated through. Add crumbled bacon over the top. Cook another 10 minutes. Serve hot.

Makes 4 to 6 servings.

These were really good. We had them this morning. It was more like a treat than just regular grits. My kids were over and even they liked it. I ( personally) would add more green onion but they were really good.

I'm flattered. I'm making them this morning for the man of my dreams....along with poached eggs and toast.

You two need an ass-wooping with your disrespect.
My great-great-great.....grandfather for whom I am named and his 300 ate grits and Greek sausage at Thermopalae the morning they fought off the evil Xerxes and his Persian hordes invading Europe and western civilization.
God dam it I am sick and tired of my people always defending the world from
the eastern uncivilized hordes...the persians, the ottomans the nazis (this one is important look into how it happened) and now once again we need to show the fucking world that forced socialism is a failure.
Off course we eat grits, we invented them.
Recipe coming soon I just need to consult with the family for the best one.
DD you little tease I would love to give you a Greek sausage with my grits.

I don't know what grits are. Ground up corn perhaps??? I have heard about them, but have never 'seen' them. I think it may be a urban legend. Rest assured, I have never seen them here. And Leo can vouch for this...the NEPTUNE DINER does not serve them. Neither does Lefkos Pyros on Ditmar's Blvd. I am still awaiting my complimentary gyro Leo...

Your great-great-great.....grandfather got his ass whopped.

" Britannica Concise Encyclopedia

Battle in northern Greece (480 BC) in the Persian Wars. The Greek forces, mostly Spartan, were led by Leonidas. After three days of holding their own against the Persian king Xerxes I and his vast southward-advancing army, the Greeks were betrayed, and the Persians were able to outflank them. Sending the main army in retreat, Leonidas and a small contingent remained behind to resist the advance and were killed to the last man."

Story doesn't end there lovergil. Wicki is your friend but a 'little' knowledge is a dangerous thing. The courageous 300 were up against as many as 500,000 and held them off for three days. Long enough to loose the battle but win the war when the rest of my uncles arrived. Pffft to you!
Same with the nazis...one month was enough to freeze their fucking Panzas in the Russian mud in November preventing them from reaching Moscow and winning the war. C'mon DD do I have to teach you sex and history too?

Oh, I realize they were great warriors, Leo. But they still lost the battle. I'm glad there was enough of your ancestors to keep the procreation process going, though. It's just like the South had great generals and militia, but still lost. Dammit.

Pam, what the fuck is wrong with you? Do you think Lefkos Pyrgos is going to have Hominy Grits? Neptune should have them though.
The best Gyro is still Uncle Georges but get the authentic Greek type not the
Americanized shit. Have some ouzo on me then go across the street and have a real frappe. Interesting that McDonalds now has real Greek frappe and has instructed their staff to pronounce it the Greek way. Also Mc atributes their quarterly increase in revenue to the greek cold coffee.
Enjoy Pam, if you were a real girl I would let you blow me but maybe you can do your landlord in liue of rent. Is that prick still giving you trouble?
Tell him 'gamissou re malaka'.

Wow, I can believe it's been since June 2010 since there were any posts here --

I am going to try this recipe today:

GARLIC CHEESE BISCUITS

Servings: 12 small biscuits
Prep Time: 8 min
Cook Time: 10 min
Difficulty: Easy

1 1/4 cup Paula Deen’s Biscuit Mix
1/2 cup water
1/2 cup grated sharp cheddar cheese
Garlic Butter:
1/2 stick butter, melted
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon dried parsley flakes
Directions
Preheat the oven to 400 degrees.
Line a baking sheet with parchment paper.
Combine the biscuit mix and cheese in a small bowl. Add water and stir just until combined. The dough will be slightly moist.
Drop the dough by tablespoonfuls onto the prepared baking sheet. Bake for about 10 minutes, until firm and beginning to brown.

While the biscuits are baking, make the garlic butter.
In a small bowl, combine the butter, garlic powder, salt, and parsley flakes. Mix well.

As soon as you bring the biscuits from the oven, brush them with garlic butter, using a pastry brush.

My dearest DD! How are you honey?
I saw your recipe and was dumbstruck. Once in a while I stop in to see whats up but rarely post. It's nice to see some familiar names still here.
Reading some of the old posts made me long for the good old days from 3,4 years ago on CP.
I will try your recipe when I have some time, but for now its 'garlic knots'
from Villa Roma Pizza when I get the garlic pangs.

You still working sweetie? are you looking for a sugar daddy?:)
Be well, be safe

Good to see you here Leo; 31 more days for me before I hang up the spikes.
One of these days after I retire, I'll PM you another naughty situation my shameless partner in crime set up for me. Sometimes she's soooo naughty.

Take care.

I know it's been forever but here is an old Greek vegan recipe which is great
this time of year with all of the home garden produce coming in at the same time.
Greek Stuffed Vegies

2 medium eggplants
2 peppers ( any color will do)
2 large zuccini
2 large tomatoes
1 cup rice
1 cup olive oil 2 if you really like olive oil ( I love olive oil)
2 tablespoons crushed garlic
1 large onion
1 can crushed tomatoes
salt and pepper to taste

Carve out vegies saving the lids for replacement during cooking
chop and mix the innards of all the vegies with 1/2 of the olive oil
throw in the garlic, chopped onion, rice and salt and pepper
fill hollowed out veggies with mixture (meat lovers can add 1ld chopped meat)
place in a deep pan
fill pan 3/4 with crushed tomatoes mixed with water
brush tops of stuffed veggies with rest of olive oil

Cook 90 minutes at 375 until veggies (particularly eggplants are soft)
May need to add water if rice absorbs all of the liquid

I always get horney after eating this and like to do Mrs Leo on the kitchen floor. Hope that visual doesn't ruin your appetite.

For those of you who have my number call if you have questions
